Salmon and Brie Grilled Cheese / Salmon Croque Madame

Serves 4

Ingredients:

8 slices rye bread, crust removed
16 thin slices Brie
24 thin slices smoked salmon
2 tablespoons butter
8 eggs
1/4 cup sliced red onion
Parsley, for garnish

Place 4 slices of the bread on a flat surface. Top each slice with 2 slices of Brie and 4 slices of smoked salmon. Place another slice of bread on top. Heat a griddle or frying pan to medium high heat and add butter. Cook both sides of the sandwiches until golden. Fry the eggs on both sides until they reach desired doneness. Serve the 2 eggs on top of each sandwich and garnish with red onion and parsley.
