Apricot BBQ Glazed Shrimp

Makes 12 appetizers

Ingredients:

12 water chestnut slices
12 medium raw shrimp, peeled and deveined
4 slices bacon, each cut into 3 pieces
2 scant tablespoons barbecue sauce
2 scant tablespoons apricot fruit spread
1 teaspoon grated fresh ginger
1 teaspoon cider vinegar
Pinch of red pepper flakes

Preheat broiler. Place 1 water chestnut slice on top of each shrimp. Wrap 1 piece of bacon around shrimp and water chestnut; secure with toothpick. Repeat with remaining water chestnuts, shrimp and bacon.

Line broiler pan with foil; insert broiler rack. Coat broiler rack with nonstick cooking spray. Place shrimp on rack.

Combine barbecue sauce, fruit spread, ginger, vinegar and pepper flakes in small bowl. Brush sauce evenly over appetizers. Broil 3 minutes; turn. Baste and broil 2 minutes more; turn again. Baste and broil 1 minute or until bacon begins to brown.
